KEY LIME PIE
1 (9") graham cracker pie crust
1/2 cup key lime juice*
3 egg yolks
1 (14 oz) can sweetened condensed milk
Combine lime juice, egg yolks, and sweetened condensed milk. Stir until smooth. (a rotary egg beater works well)
Pour into crust and bake at 350 for 15 minutes. Cool 10 minutes before refrigerating.
Top with whipped cream and serve!
* Nellie & Joe's Key West Lime Juice is available in major grocery stores. It's not cheap, but a bottle makes 4 pies. Don't use regular lime juice! (I saw it cheaper at Super Wal-Mart)
The egg whites are not used unless you want to make meringue for the topping.
I'm lazy and use Redi-Whip.
(Cool Whip is gross, Redi-Whip is at least made from real cream. )
If you have a mixer, whipped cream is easy to make with heavy cream and powdered sugar, maybe a drop of vanilla. You could Google it...
Graham Cracker Crust
1 1/2 Cups graham crackers crumbs
1/3 cup sugar
6 Tbls. butter, softened
Mix together, press into pie plate. Refrigerate for at least one hour before filling.
The crust tastes great, but it's hard to get out of the pan...
should probably have buttered the pie pan first.
Or, you can cheat and buy a packaged crust... The Keebler Elves will make one for you.
Key West is awesome...
